Poor Man Eclairs

Do you have a party to go to anytime soon?
Would you like to be the coolest person at that party?
Then you need to make these.

This is one of my go-to desserts for any event. It is served cold, so obvs great for summer, but I also made them three times in December & January. They are delicious and you will soooo thank me for giving you the recipe. Your waist line might not thank me, which is why you should take them to a party. Let other people get fat. Who am I kidding, if there are leftovers you are totally going to be eating them strait outta the pan they are that good. And then the next thing you know you've eaten all of it. Not that I've done that. 

These are also one of the easiest desserts to make that will have everyone asking for your recipe.
{And you should seriously consider telling them that they are extensive and require the most precise and expensive ingredients and therefore should only have you make them to save them all the trouble. aka. you get to be the lady with the yummy desserts.} 

Did I mention they are seriously tasty? I am eating a slice right now and they are amazing. I would even go as far to say that they are, how do you say? "amazeballs." *And while we are on the subject can we stop using that adjective. It's weird. And I feel dirty having said it. But it was the first thing I thought of, and I kinda love that my mom probably gasped and covered her eyes when I said that.*

Ready? Assemble ingredients. Make sure all labels are showing if you plan on blogging about it. lame.

In a 9x13 baking pan layer your graham crackers.


Catch cute kid sneaking left over graham crackers.

In a large bowl, make pudding according to package. 
After stirring add cool whip and whisk together.

Let cute kid lick spatula. 

 Poor your pudding mixture over the graham crackers.
Now add another layer of crackers on top.
{Note. You could totally do half the pudding mixture, graham crackers, remaining mixture and final layer of graham crackers if you wanted to make it a double decker. I didn't, but you could, and maybe should. I might next time.}

In the microwave melt the frosting.
{I do 10 second intervals three times and stir in between.}
Pour over graham crackers and spread evenly. 
{With a new spatula since you let your kid lick the first one.}
Place in fridge for a minimum of 3 hours, but probably not more than 5 before serving.
Slice, serve & enjoy.


My mother in law was the one who first made these for me and they have been a favorite of mine for 12+ years.

I hope you guys have an excuse to make these. And if not, for heaven's sake find one. Oooo, they'd be good to take to a new mom with a super yummy dinner. If you are going to a party and we're both bringing dessert you'd better not bring these, because more likely than not, I am.
